The Jacksonville Jumbo Shrimp Culinary Operations Intern position is a great learning experience in the minor league baseball industry for the culinary side of hospitality, premium spaces, catering, and other specialties. The goal of this position is to get directly involved and gain hands-on experience in the day-to-day operations of a Triple-A Minor League Baseball food & beverage and culinary operation. The Culinary Operations Intern will work closely with the Culinary Operations Manager and Director of Food & Beverage in all aspects of the F&B operation focusing on the new PNC Home Plate Club, the Right Field Club Restaurant, Suites, and the Group Hospitality Spaces. This will allow candidates to learn several different aspects of running a Food & Beverage and Kitchen Department for a large multi-purpose facility.
By the end of the season, The Culinary Operations Intern will have in-depth knowledge of managing and operating catering areas and kitchens of a high-level sports venue and gain valuable networking opportunities within the team & Minor League Baseball itself as well as with partners and vendors.
RESPONSIBILITIES:
Help ensure the State of Florida Health department and regulations are followed, including product rotation and sanitation.
Preparation of a rotating buffet menu in the PNC Home Plate Club, ensuring preparation is on schedule, service space and food displays are ready, and quality is consistent to a high level.
Working with a team in preparation and execution of Group Hospitality Spaces on the concourse level and Skydeck's, keeping track of different party sizes and par levels.
Preparing and executing a restaurant style/made-to-order menu in the Right Field Club, maintaining efficient ticket times while upholding quality.
Working with the chef to make daily prep lists, ordering and receiving, seeking new revenue streams, sales forecasting, special events and special menus.
REQUIREMENTS:
Must be at least a Sophomore actively pursuing a degree or a recent graduate with a degree in Culinary Management, Culinary Arts, Hospitality Management, or related field.
Strong interest in Culinary Arts
Previous restaurant back of house or kitchen experience, food & beverage/restaurant preferred.
General kitchen knowledge, including knife skills, basic cooking techniques, etc preferred.
Strong computer skills (Microsoft Office preferred).
Ability to work daily both on non-game weeks as well as during all 75 home games and other non-baseball events.
Must provide own transportation.
Ability to lift and carry boxes up to 50 lbs.
Ability to work and communicate well with others.

Compensation:
$13/hour with the potential to earn college credit based on the requirements outlined by the college or university.
Time Frame:
Time Frame: (Spring 2025 - September 2025) Start dates are flexible but can start as early as early-March. It is expected that interns have open availability to work a full work schedule during the season and work ALL the Jax Jumbo Shrimp home games.
